Jarrah is a rare honey from white flowers on jarrah trees that bloom in cycle. Bees gather nectar in remote forest hives, producing a dark, complex flavour with a naturally high Total Activity profile. Activity, testing and quality

Jarrah is an Eucalypt honey. We use Total Activity to describe measured antimicrobial activity. Higher numbers indicate higher measured activity. MGO is used for Manuka honey, not for jarrah. Every batch is independently tested to recognised methods and the rating is shown on the label. Certificates are available for trade on request.

Taste, texture and simple care

Season and nectar flow shape colour, clarity and texture. Some jars are light and clear, others set to a soft, creamy finish. Crystallisation is natural in raw honey and signals no heat treatment. To soften, stand the closed jar in warm water and stir until smooth. Store in a cool, dry place out of direct sunshine.
