Raw vs pure, and why honey crystallises

Both raw honey and pure honey here are unpasteurised and minimally handled. “Pure” refers to nothing added; “raw” refers to no heat. Honey can crystallise/crystallize over time. That natural set is driven by composition (glucose/fructose balance), tiny seed crystals and even trace yeast cells. Some varietals (e.g. light clover or canola) set faster than bold eucalypts. To soften, stand the closed jar in warm liquids (hand-warm water) and stir. Do not microwave or boil, heat can affect flavour and texture.

How to enjoy, every day

Spoon it straight from the jar, or keep it simple:

  • Drizzle over fruit, yoghurt and toast
